Capitol Hill residents have a super new swanky-hip establishment to enjoy on Seattle’s 15th Ave. E. – Bar Vacilando, the creation of Executive Chef Brian Durbin and his vetted team (psst…the same squad behind Black Bottle in Belltown and Bellevue).
As the tagline goes, “Food & Drink for the Passionate Wanderer” are absolutely what diners will find at the luxe white space with patio probabilities. When the sun is out and Seattleites are in search of a favorite sunny haunt, this is the spot. Seats line the courtyard for an open air dwelling increasingly hard to master on Capitol Hill.
Now, for the real reason you came: the food. Mixing salty and sweet, spicy and tart – Bar Vacilando leaves no taste bud unturned. The Green Bean Fries are lightly battered and served to suit two. In fact, while we’re on the subject, many of the items on the modest menu are to be enjoyed tapas style. That is, try a little of everything – you won’t be disappointed.
The Grilled Romaine Caesar with Pancetta is lightly toasted for that feel good vibe one can only get while earing something so good for you, but with a twist of fire. The Jamaican Jerk Drums and Papaya Chutney is a coveted dish on this menu, consisting of titles “Veggies,” “Seafood,” “Meat,” “Crusts,” and “Sweets.” Even the Cumin Lamb and Olive Pilaf has a little kick. Imagine a mouth-watering buttery lamb dish accompanied by a tangy rice side and you have arguably one of the best dishes in the place. For the non-meat lovers, the Portuguese-Style Local Purple Clams with Cilantro is a must-try.
Vegetarian? Believe it or not, there are selections made with you in mind. Case in point: the Old Country Veggie Romesco crust or the Field Salad with Marcona Almond Cherry Tomato Strawberry.
Pair each delectable dish with house cocktails like Airmail (rum, cava, lime, honey) or The Gabery – named after Gabe, a huge influence at Bar Vacilando (tequila, lime, grapefruit, elderflower, agave). The Arca Nova Vinho Verde should not be missed.
