In just a few weeks, the boys of The Belltown Pub will be launching their new restaurant, Tr3s Cocina/Cantina. Executive Chef and partner Erwin Arceo has designed a core menu exclusive to organic meats and vegetables. Proteins are sourced from local, sustainable farmers, with the majority of seafood coming “right off the boat” fresh from the vendors at the Pike Place Market. Everything is made in-house. The offerings celebrate the traditional foods of Mexico with dishes crafted by blending “Old World” Aztec and Mayan flavors with “New World” techniques and ingredients – resulting in distinctive, authentic and inimitable cuisine.
Guests will be able to enjoy “next level” Mexican small-plate-style dining, packed with big flavors. Many dishes will be drawn from the raw bar: a showcased rotating selection of just caught global seafood items which become the featured ingredients for dishes such as Mescal-Beet Cured Salmon, a Blue Fin Tuna Tostada, Hawaiian Tuna Crudo, and Oysters on the Half Shell. The Elote Ensalada tops a list of starters with shaved grilled corn, watercress, radish, cotija cheese, Japanese eggplant, red pepper, jalapeno oil and a tequila vinaigrette. Decadent Maine Lobster (not boiled live) is served with a pipian verde parmesan crust, cilantro-lime garlic butter and spicy arbol sauce. A gorgeously presented Whole Fried Pink Snapper is served with corn tortillas and several salsas. The extensive menu which includes a large selection of tacos and updated classics, ranging from Grilled Cactus and Caramelized Red Onion Quesadilla to a Smoked Salmon Tamale, will also be accompanied by a daily “Especials” sheet.
Tr3s’ beverage program will have a world class selection of tequilas and mescals complemented by a wine list featuring local and international pours along with bottlings from Argentina, Chile, Mexico, the Pacific Northwest and Spain. The bar menu will feature mescal infused and healthy cocktails, along with mini drink flights. Margarita enthusiasts can enjoy infused fruit concoctions, thanks to two large slushy machines. Imported Mexican beers with a rotating local brew handle, round out the offerings.
Erwin Arceo, Dave Tolan and Zach Nethercutt’s newest endeavor is scheduled to open soon in Seattle’s historic Belltown neighborhood, where the trio first started their journey together. Tr3s Cocina/Cantina is located at 2328 First Avenue, Seattle, Washington 98121.
